A Famous Bengali Sweet / Boondi Kheer / Bonder Payesh

Hi friends,
My today’s recipe is boondi kheer – a mouth watering sweet made with milk and sweet boondi (sweet of Bengal gram flour). It is a famous Bengali dessert made during festivals. It is very tasty and very easy to prepare.



Cooking time – 40 minutes.  Serve – 4
Ingredients -
For make boondi -
1.Gram flour (besan) – 1/2 cup.
2.Oil fir deep frying.
3.Sugar – 1 cup.
2.water – 1 cup.
To make kheer -
1.Milk – 1 liter.
2.Sugar – 50 grams.
3.Sliced cashew nuts – 2 tbsp.
4.Condense milk – 2 tbsp.
5.Cardamom powder – 1 tsp.
Method – (for boondi)
1.In a bowl take besan, add water to make a batter (condense milk like). Beat The batter until fluffy. Cover the bowl let it rest for 10 minutes.
2.Boil sugar and water on high flame, reduce heat and cook until it reaches single thread consistency. Keep them aside.
3.Heat oil in a frying pan. Using a perforated spoon drop small balls of besan batter, fry them till crispy. Take them out of the frying pan with a slotted spoon and dip them into sugar syrup.
Boondi is ready for making kheer.
Method – (for boondi kheer)
1.Boil the milk in a heavy bottomed pan on medium heat, stir constantly to prevent it from burning at the bottom. Cook till 1/2 the quantity is left.
2.Add sugar and stir till sugar dissolves.
3.Add boondi and mix well, cook for 3-4 minutes on low flame.
4.Add condense milk, mix well and cook for 2-3 minutes with stirring constantly.
5. Remove pan from heat, mix cardamom powder and cover the pan. Give 10 minutes standing time.
Boondi kheer is ready to serve. Garnish with sliced cashew nuts.

Coconut Pudding/Nariyel Kheer/Narkel Payesh

Hi friends,
My today’s recipe is Coconut Pudding – a popular Indian dessert made with coconut and milk.It is very tasty, quick and easy to prepare and unique dessert for a party.


Cooking time – 40 minutes.  Serve – 2
Ingredients -
1.Shredded coconut – 1 cup.
2.Ghee – 2 tbsp.
3.Milk – 1 liter.
4.Sugar – 1/2 cup.
5.Condense milk – 2 tbsp.
6.Cardamom powder – 1/4 tsp.
7.Cashew nuts – 5-6 (for garnishing)
Method -
1.Heat ghee in a non- stick frying pan. On slow flame stir fry the coconut for 3-4 minutes. Remove from heat,keep aside.
2.Boil milk in a heavy bottomed pan on medium heat, stir constantly to prevent it from burning at the bottom. Cook till three fourth the quantity is left. Add coconut,mix well and cook for 7-8 minutes with stirring occasionally. Add sugar, stir till sugar is dissolve. Add condense milk, mix well and cook until a creamy consistency is obtained.(stirring constantly)
3.Remove pan from heat, add cardamom powder and mix well. Cover the pan and give 10 minutes standing time. Allow to cool to room temp. Refrigerate until well chilled.
Coconut pudding is ready to serve,garnish with cashew nuts and serve as a dessert.

Coconut–Jaggery Sweet / Narkel Naru / Sweet Coconut Ball

Hi friends,
My today’s recipe is narkel naru – a simple sweet dish made of coconut and jaggery. It is very tasty and very popular in Bengal. It is easy to prepare and only with few ingredients.



Cooking time – 40 minutes. Serve – 4
Ingredients -
1.Shredded coconut – 2 cup.
2.Shredded jaggery – 1 cup. (shred jaggery using a grater).You can use liquid jaggery also.
3.Cardamom powder – 1 tsp. OR a pinch of camphor.
Method -
1.Put coconut. and jaggery in a heavy bottomed pan and mix well.
2.On low flame cook the coconut-jaggery mix for 8-10 minutes with stirring constantly to prevent it from burning at the bottom.
3.When the mix comes together (Leaves the side of the pan) add cardamom powder or a pinch of camphor,mix well and remove the pan from heat.
4.Keep the hot mixture in large bowl. Let it rest for 10 minutes.
5.10 minutes later after it partially cools down, take a small portion and roll into small round. Narkel naru is ready. Reapet the same process for making all the coconut balls.
6.Keep them in a flat bowl ,cool completely.



Serve  narkel naru as a sweet and store in an air tight container, keep in fridge.
