Chocolate stuffed Cashew Nuts Sweet / Chocolate Kaju Katli

Hi friends,
My today’s recipe is chocolate kaju katli – a famous Indian sweet with a little twist.It is made with cashew nuts and grated chocolate. It is very tasty easy to make.


Cooking time – 30 minutes.  Serve – 4
Ingredients -
1.Cashew nuts – 1 cup.
2.Corn flour – 1 tbsp.
3.Sugar – 1/2 cup.
4.Water – 1/4 cup.
5.Grated chocolate – 1 cup.
6.Ghee for greasing.
Method -
1.Grind the cashew nuts into a fine powder.
2. In a bowl mix cashew powder and corn flour, keep aside.
3.In a non-stick frying pan take sugar and water. On medium heat boil till a single thread consistency is obtained. Reduce heat, add cashew-corn flour mix and keep stirring. On low flame stirring till it reaches a soft dough consistency.
3.Transfer the dough to a flat dish, start kneading and make a smooth dough.(sprinkle milk if needed)
4.keep the dough on greased tray and using a greased rolling pin roll out the dough into a thin layer (rectangular shape).
5.Spread the grated chocolate evenly over the dough.(grate chocolate using a grater)
6.Roll the dough slowly into a log.
7.With a sharp knife slice it cleanly into 1/4 inch thickness.
Chocolate kaju katli is ready to serve.Shift them in a plate and serve as a dessert.

Milk Pudding With Cottage Cheese / Chanar Payesh

Hi friends,
My today’s recipe is chanar payesh – a popular Bengali dessert, made with milk and paneer. It is an authentic Bengali dish, can be prepared very quickly.

 
Cooking time – 40 mins.  Serve – 4
Ingredients -
1.Cottage cheese/paneer – 1/2 cup (grated)
2.Milk – 1 liter.
3.Condense milk – 2 tabspoon.
4.Sugar – 2 tabspoon or to taste.
5.Raisins – 2 tabspoon.
6.Rose water – 1 tspoon.
Method -
1.Take grated paneer in a flat dish and start kneading with the palm for 5-6 mins to get smooth nice texture. Make tiny balls (pearl size) with the paneer and keep aside.
2.Boil the milk in a heavy bottomed pan on medium flame.Stir constantly to prevent it from burning at the bottom. Cook till half the quantity is left.
3.Add sugar and condense milk, stir till sugar dissolves, add raisins and paneer balls slowly.
4.Gently stir to mix the balls to the milk.
5.Simmer for 4-5 mins on low flame, then remove the pan from heat. Sprinkle the rose water and cover the pan. Give 10 mins.standing time.
Chanar payesh is ready, bring it to room temp and then chill in refrigerator.
Serve chanar payesh as a dessert.

Shahi kheer / Payesh Recipe -(A Delicious Indian dessert of milk and rice)


Hello All !!,
My today's recipe is an Indian Desert. Its delicious and one of the main dishes of any Bengali birthdays.
Lets Start the recipe..

Shahi kheer / Payesh Recipe 
Preparation Time: 40 minutes
Serving Size : 2

Ingredients -              
                   1.Milk   -  1liter.
                   2.Basmati rice- 4tabspoon    
                   3.Sugar      -  1/2 cup.  
                   4.Cashew nuts - 10-12 (broken into pieces)  
                   5.Raisins     -  1 tabspoon.  
                   6.Cardamom powder - 1/2 teaspoon.   

Method -   
  • Wash rice and soak in normal water for 1 hour.  
  • Drain water from rice and keep aside. 
  • Heat milk in a heavy-bottomed pan or fry pan.
  • Bring milk to boil.Add rice and cashew nuts and stir.On medium heat cook for 12 to 15 mins (occasionally stir) until the rice is completely cooked.  
  • Add sugar and raisins and cook for 5 mins,stirring constantly. 
  • Remove pan from heat. Add cardamom powder and cover the pan with lid.
  • Allow to cool naturally,keep in fridge. 
  • Serve cold as a dessert.
